Matt's Sourdough Bread Recipe (Updated Dec 2011)

  • 5-10g Salt
  • 10g Buckwheat Flour
  • 50g White Whole Weat Flour
  • 50g All-Purpose Flour
  • 340g Bread Flour
  • 55g Sourdough Starter
  • 260g Water (not too much)

Matt's Sourdough Bread Baking

Follow the sourdough starter schedule. Be sure to preheat your oven to 450 degrees with your dutch-oven.

Transfer the proofed dough into the dutch-oven and bake with the lid ON for 27 minutes and OFF for an additional 13-15 minutes.

Transfer the fresh bread onto a wire-rack and let cool completely.
